About MTSU’s Development Team

Meet MTSU’s development team, who selected, remixed, and edited the content for this edition of the book.

Janet Colson, PhD, RDNJanet Colson, PhD, RD

Dr. Janet Colson is a professor and coordinator of the Nutrition and Food Science program at Middle Tennessee State University (MTSU). She earned her PhD in Nutrition and Food Science from Florida State University. Before joining the MTSU faculty in 1990, she taught at Mississippi College in Clinton, Mississippi, and at Florida State while completing her graduate studies.

At MTSU, Dr. Colson teaches advanced nutrition metabolism and life cycle nutrition. She also serves as editor for McGraw Hill’s Taking Sides in Food and Nutrition and Annual Editions: Nutrition. In both her teaching and writing, she is dedicated to making nutrition science clear, practical, and relevant to everyday life.

Outside of her academic work, she enjoys family life as the mother of two and “Mimi” to three grandchildren.

 

Sarah A. Harris, PhD, RDN

Sarah A. Harris, PhD, RD

Dr. Sarah A. Harris is both an alumna of MTSU and a lecturer in the Nutrition and Food Science program. She is a Tennessee-licensed Registered Dietitian with professional experience ranging from lactation to gerontology. Courses taught include Introduction to Nutrition & Wellness, Sports Nutrition, Community Nutrition, and Nutrition in Aging.

Outside of teaching and writing, she can be found running ultramarathons, boating, reading, playing piano, and keeping up with her two boys.
